Lemon Pie: A Classic and Refreshing Dessert
Ingredients:
For the Crust:
250 g (2 cups) of all-purpose flour
125 g (1/2 cup) of cold unsalted butter, cubed
50 g (1/4 cup) of granulated sugar
1 large egg
A pinch of salt
1-2 tablespoons of cold water (if needed)
For the Lemon Filling:
200 ml (3/4 cup) of freshly squeezed lemon juice (about 3-4 lemons)
Zest of 2 lemons
150 g (3/4 cup) of granulated sugar
4 large eggs
125 ml (1/2 cup) of heavy cream
For the Meringue Topping (optional):
3 large egg whites
150 g (3/4 cup) of granulated sugar
A pinch of cream of tartar (optional, for stability)
