Ogura cake: the Japanese cake as soft as a cloud!

INGREDIENTS:

4 egg whites
4 egg yolks
90 g of sugar
70g 00 flour
50 ml of olive oil
90 ml of orange juice
1/2 teaspoon of salt

PREPARATION:

Beat the egg yolks with the orange juice, olive oil, salt and sifted flour. Mix well until you obtain a compact and creamy mixture.
Pass the mixture through a sieve.
Beat the egg whites with the sugar until stiff peaks form. We combine the two compounds and mix well.
Place the casserole dish in a larger circular baking dish. Pour the mixture into the saucepan and the boiling water into the saucepan.
Cook in a bain-marie in the oven at 150° for 1 hour, then lower to 130° and cook for another 30 minutes.
