Before the fall soups come back, let’s enjoy the mixed salads a little more! This one, which mixes fruits, vegetables and shrimp, is one of the many variations of the Hawaiian salad. It would seem that anything that contains pineapple can be described as “Hawaiian”… Possibly, in any case, this sweet and salty salad is very pleasant to taste, even in our latitudes.
If you already have leftover cooked rice on hand, then it won’t take much time to prepare this salad. I adapted the ingredients a little from the initial recipe, especially for the sauce (a kind of low-fat mayonnaise with yogurt).
